The Jende Ceramic Sharpening Steel Set consists of our Black and White Ceramic steels. Our ceramic steels have break resistant technology in the tips and handles that makes these steels actually usable in an active kitchen setting, minimizing the worry of the slightest breeze or hard stare causing them to break. The handle is a sturdy stainless steel with a polypropylene grip.
The difference between the Black and White steels are the hardness of each. The black ceramic steel is a little "softer" about Mohs 8, leaving a finer finishing scratch that is better for lighter maintenance and slightly more refinement. The white ceramic steel is "harder" at a Mohs 9, which makes a more aggressive scratch that is is better for softer knives and leaves a little more tooth. In simpler terms, the white steel is about 1,200 grit while the black steel is about 1,500.
